The Pesciugatore® Electric Fish Dry Aging Cabinet – 100 Kg (Model PES104V4_Black) is a multifunctional, patented Italian system designed specifically for curing, dry aging, and smoking fish and seafood under fully controlled and food-safe conditions. Engineered for professional use, this cabinet is ideal for producing premium Seacuterie, fish fillets, loins, and sea salami with precision and consistency.
The system uses advanced pH and humidity control to recreate stable and precise microclimates inside the cabinet. This is achieved through the patented Fumotic® and ClimaCure® systems, which allow accurate regulation of airflow, humidity, aroma, and environmental conditions essential for fish maturation.
Equipped with 5 preset climatic recipes, the cabinet simplifies operation while ensuring repeatable results. A comprehensive HACCP data trace system with GSM cloud connectivity allows full monitoring, traceability, and compliance. The integrated 7-inch touchscreen controller provides intuitive access to recipes, process parameters, and weight loss management throughout the aging cycle.
The cabinet is fully constructed in AISI 304 stainless steel for both interior and exterior, ensuring maximum hygiene, durability, and resistance to corrosion. Triple-glazed glass doors provide excellent insulation and visibility, while hot gas defrost ensures stable operation. A built-in C.I.P. (Cleaning-in-Place) system simplifies sanitation and reduces downtime.
Additional features include controlled dehumidification, internal LED lighting for enhanced product visibility, and height-adjustable legs or optional skirting board for flexible installation. An optional cooking system is included, expanding the cabinet’s functionality beyond dry aging and curing. The unit is supplied with 7 grills/racks and 7 guide sets, allowing efficient product arrangement and airflow.
