The MATURMEAT Dry Age Cabinet – 100 Kg is a professional-grade solution designed for precise meat maturation and dry aging under fully controlled, food-safe conditions. This patented system ensures accurate control of humidity, temperature, airspeed, and pH, delivering consistent and high-quality dry-aged meat results.
Equipped with an advanced touchscreen control interface and intelligent management system, the cabinet allows operators to monitor and regulate all critical parameters with precision. It supports the drying and maturation of primals and sub-primals with a total load capacity of up to 100 kg, making it ideal for supermarkets, meat wholesalers, butcher shops, and professional restaurants.
The cabinet includes five grill racks with guides and features a dual-tank Fumotic® system designed for water, aroma infusion, and smoking. Relative humidity is adjustable from 30% to 99%, while the operating temperature ranges from 0°C to +35°C, enabling full flexibility for different dry-aging techniques and meat types.
Integrated systems include continuous pH monitoring, controlled air exchange, full HACCP traceability, and a C.I.P. (Cleaning-in-Place) system to ensure maximum hygiene and ease of maintenance. HACCP data tracking is managed via a 7-inch touchscreen and supported by GSM cloud connectivity and a USB port for data export and compliance documentation.
The interior is constructed entirely from food-grade AISI 304 stainless steel, ensuring durability and hygiene. Triple-glazed glass doors provide excellent insulation and visibility, while integrated LED lighting enhances product presentation.
